Aunt Ruby's German Green Tomatoes
Aunt Rubys German Green Tomato
Solanum lycopersicum Aunt Ruby's German Green
Heirloom green beefsteak with a deliciously sweet flavor that's enhanced by a spicy undertone. Globe-shaped fruits are smooth skinned, 12 to 16 oz., with light green skins at maturity and just a hint of yellow. Flesh is green blushed with pink, meaty, and flavorful. Makes interesting juice!

You just can't beat a ripe Aunt Ruby's German Green for flavour! The problem is figuring out when one of these tomatoes is ripe--because they really do stay quite green, until they are over-ripe. At that point they develop a sort of orangey-rosiness on their bottoms ("blossom" end!) One clue--they soften when they are ready to pick. Also: in my garden, the vines set fruit later than the other kinds of tomatoes I was growing, but then they did pump out lots of yummy tomatoes! Be patient!
